Temperature and Moisture Are Two Different Problems
Most of the mattress industry treats hot sleeping as a single problem with a single solution: lower the temperature at the surface. Gel infusions, graphite strips, copper particles, and phase-change covers all work along that axis.
Night sweats are different. The discomfort that wakes someone up is usually not heat by itself. It is damp fabric against skin, followed by a chill as that moisture evaporates. A surface that has been cooled but cannot move moisture will still leave a sleeper lying in it.
These two properties are independent. A mattress can be cool to the touch and still hold humidity at the surface. A mattress can also manage moisture well without any cooling technology at all. When the complaint is waking up damp, moisture handling is the variable to evaluate first.
How Wool Handles Moisture
Wool is hygroscopic, which means it absorbs water vapor into the interior of the fiber rather than carrying it along the outside. This is a structural property of the fiber, not a treatment applied to it, so it does not wash out or wear off.
The practical consequence is a buffer. Wool can take on approximately 30% of its dry weight in moisture before the surface feels damp to the touch. Synthetic fibers cannot do this. Polyester absorbs on the order of 1% of its weight and instead spreads moisture across its surface, which works while evaporation keeps pace and fails when perspiration outruns it.
Wool also releases that moisture gradually as conditions change, which is why the same fiber is used in both warm-weather and cold-weather garments. It is buffering the microclimate next to the skin rather than insulating in one direction.

The Layer Touching You Matters Most
A mattress that manages moisture well can be canceled out by the layers on top of it. For sleepers who wake up damp, this is the most common and most fixable cause.
Sheets. Polyester and poly-blend sheets sit directly against skin and hold roughly none of the moisture leaving your body. Organic cotton percale, linen, and hemp all absorb and release. Percale in particular has a crisp, open weave that suits sleepers who run damp.
Duvet fill. Synthetic fill traps humidity in the same way synthetic sheets do. Down, alpaca, and silk manage it considerably better.
Mattress protectors. This is the layer most often overlooked. A conventional waterproof protector built on a thick plastic or vinyl barrier is, by design, a moisture barrier. It will hold perspiration at the surface no matter what the mattress underneath is made of.
